Winemaking Process
At Havana Hills, each terroir is carefully selected for its suitability to a specific grape variety. Yields are kept rigorously low - up to one third of the grapes are cut off during the growing season - while dry land conditions further contribute to the intensely flavourful berries produced by the vines.
Behind Every Great Wine Lie Several Secrets
Come harvest time, only perfectly ripe, unblemished berries are allowed into the crusher. Completed in 2000, Havana Hills' impressive cellar combines the latest technology with time-honoured methods of winemaking.

A Fusion of Innovation And Tradition
State-of-the-art equipment ensures that every batch of grapes is kept cool to retain the natural attributes of the fruit. Traditional methods such as prolonged skin contact allow the reds to extract maximum colour and flavour concentration, while lengthy maturation in selected French and American oak barrels adds the required complexity and finesse.
